The cow was at the heart of many Irish farms. She provided milk for the family, cream for the table and butter for the pantry.

Morning and evening, milking was part of the daily rhythm of farm life. The cows were cared for in the byre, especially through the cold winter months, with fresh straw, water and a little kindness.

Milk was used in so many ways — for drinking, making butter, baking bread and feeding the family. It was simple, hardworking country life, where nothing was wasted and every animal had its place.
